We had these waffles this morning and couldn't get enough of them! This recipe is adapted from the original one I found here on allrecipes.com. I doubled this recipe and was glad I did! I had a few to put in the freezer, but not as many as I'd anticipated.
1 3/4 cups skim milk
2 Tbsp canola oil
6 Tbsp pumpkin puree
1 teaspoon vanilla extract
1 cup whole wheat pastry flour (i buy this from Vitamin Cottage here in Colorado)
1/2 cup flax seed meal
1/2 cup rolled oats
1/4 cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 tbsp pumpkin pie spice (can use cinnamon, nutmeg, ginger and cloves if you don't have pumpkin pie spice)
In a large bowl beat the eggs until they are light and fluffy. Add milk, oil, pumpkin, and vanilla. Beat in remaining ingredients until batter is smooth.
Preheat your waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
