Oatmeal Chocolate Chip Bars

1 egg
1 egg white
¾ cup sugar
½ cup packed brown sugar
3 tbsp canola oil
1 tsp vanilla
1 ½ cups whole wheat flour
1 tsp baking soda
½ tsp salt
1 ½ cups rolled oats
½ cup mini chocolate chips

Coat a 9x13 pan with cooking spray and set aside. Mix the egg, egg white, and sugars until smooth. Add the oil and vanilla, mix for 10-15 seconds. Add the flour, baking soda, and salt. Mix until just blended. Add the oats and incorporate with on/off turns. Sprinkle with chocolate chips and lightly mix them in. Transfer the dough to the pan-- it will be thick. Wet your fingers with water and press the dough evenly into the pan. Bake at 350F for 15-20 minutes, or until a toothpick inserted in the center comes out clean. Do not let them brown-- they are better when they are soft and chewy! Cool in the pan and then cut into squares.

We made this for FHE tonight and everyone loved them... we added raisins - they tasted great with the chocolate chips. Next time I might throw in a bit of cinnamon too.

These had a great, chewy texture. They even worked well using powdered EnerG egg replacer (making them Vegan and even lower fat; I just did it because I was out of eggs). I love that you can use canola oil instead of the butter that most cookies ahve and still get a very satisfyinf oatmeal cocolate chip experience!
