Black Bean and Mango Salad

Dressing:
¼ cup lime juice
¼ cup rice vinegar or red wine vinegar
1 Tbsp honey (I always end up adding closer to 4-5 tbsp to make the whole salad sweet enough
¼ tsp ground cumin
2 tsp olive oil
salt
pepper
1 cup chopped cilantro

Salad:
1 head of romaine, cut into bite sized pieces
1 pint cherry tomatoes, halved (i've used normal tomatoes, which works too)
4 carrots peeled and julienned
1/4 of a red onion, thinly sliced
2-3 mangoes
1 can black beans, rinsed and drained

Prepare the salad and the dressing separately. Add the dressing just 15-20 minutes before serving.

We had this tonight and we all really liked it, even Aaron, who doesn't always think beans "go" on a salad. Two thumbs up!
